Start with Tundra homestead. It's got the ability to display so much and has all the crafting and cooking (and baking) stations you'll ever need, kinda makes the other homes obsolete. But it is kinda small. Proudspire would be a good city home for an Imperial, especially if you end up siding with the Empire.
